Frequently asked questions
For most applications, frozen mushrooms should be cooked directly from frozen without thawing. Thawing releases moisture that makes mushrooms watery and reduces sautéing performance. In pizza manufacturing, mushroom slices are applied directly from frozen to the pizza base — the baking cycle cooks them perfectly. In soups and sauces, add frozen mushrooms directly to the cooking vessel. The only exception is salad applications, where gentle thawing may be preferred for textural reasons.
