Available in whole, sliced, and quartered formats to serve the full spectrum of food manufacturing and foodservice applications — from pizza topping slices to chunky soup pieces to whole mushroom vegetable mixes.

Frozen mushrooms are one of the most widely used vegetables in food manufacturing globally, appearing in soups, sauces, pasta dishes, pizzas, ready meals, vegetable mixes, stir-fries, and quiches. IQF processing enables precise portioning without thawing waste, consistent piece size for quality control in manufacturing lines, and 18-month shelf life stability at -18°C without preservatives.

Frequently asked questions

For most applications, frozen mushrooms should be cooked directly from frozen without thawing. Thawing releases moisture that makes mushrooms watery and reduces sautéing performance. In pizza manufacturing, mushroom slices are applied directly from frozen to the pizza base — the baking cycle cooks them perfectly. In soups and sauces, add frozen mushrooms directly to the cooking vessel. The only exception is salad applications, where gentle thawing may be preferred for textural reasons.

IBIC supplies frozen mushrooms in four formats: (1) Whole — cap and trimmed stalk, sorted by size grade (small, medium, large); (2) Sliced — uniform 4–6mm slices ideal for pizza and pasta; (3) Quartered — cap quartered for soups, ready meals, and stir-fries; (4) Diced — 1cm×1cm uniform dice for even distribution in sauces and processed foods. Specify format and size grade at order. Oyster and Shiitake mushroom formats available upon request and subject to minimum quantities.
